But what is truth and what is myth? As a certified trainer, nutritionist and healthy mama of three let me share with you a few foods that you should be eating every single day:

DINNERS FOR GIRLS WHO DON'T LIKE TO COOK

Ad1 If you love to cook, well, I envy you. I don't like it, at all... but I do love eating, so I've had to learn. I've found a few fab dinner recipes I adore, so if you loathe cooking too, have a look, and maybe your time spent in the kitchen won't be miserable... maybe you'll even love it!


1. SHRIMP & ASPARAGUS STIR-FRY
I love this dinner recipe because it's so incredibly tasty, and because it's easy to make... and also because it comes in under 300 calories. Triple win!


2. SLOW-COOKER BEEF AND BROCCOLI

There's something magical about slow-cooker dinners. You put some ingredients in, and in a few hours, a meal is ready. This dinner's delicious, too... I've made it with chicken and it's also really tasty.

3. CHEESY PESTO-STUFFED SALMON

I usually just wrap salmon in foil and throw it on the grill, but this dinner recipe has me going more gourmet. I mean, there's cheese in it. What more do you need to know?


4. ONE-POT LEMON GARLIC SHRIMP PASTA

Part of the reason I hate cooking is because I hate having to clean up all the pots and pans after. This delicious dinner uses only one pot, which means there's very little to tidy up. Hooray!


5. ONE-POT CHICKEN FAJITA PASTA

This is another one-pot dinner, and it's perfect for summer! I love the spicy flavor and that it's pretty healthful, and that even my picky eater (looking at you, honey) loves it.


6. ONE-PAN SRIRACHA CHICKEN AND VEGGIES

Are you seeing a one-pot trend here? I love this recipe, again, because clean-up is so simple, but also because this dinner is so yummy. It's a little spicy, so look out! ad2

5 DRINK THESE IF YOU WANT GREAT SKIN

Ad1 You know you have to drink lots of water and you know you have to avoid soda to stay healthy and to look good. But what about drinks that supercharge your skin and make it radiant and glowing? For this you need beverages that not only hydrate your body but are loaded with antioxidants to fight off aging, promote hydration, and leave your skin looking its best. Make these drinks a part of your long-time menu.

Soy milk is not only great for your bone health, it is also fantastic for improving your skin. Soy milk contains something called isoflavones which can work to guard your skin against wrinkles by protecting your natural collagen. This particular type of green tea contains almost 10 times as many antioxidants as the normal variety, which means that it will be 10 times as successful at reducing the effects of aging on your skin.

4. POMEGRANATE JUICEPomegranate Juice
Amazingly, pomegranate juice contains nearly twice as many antioxidants as healthy green tea. Experts have stated that drinking a few glasses of pomegranate juice every day can help to lessen the look of the lines and wrinkles that start to appear on your face.

5. GREEN JUICE WITH KALE
One of the best drinks that will improve your skin is green juice with kale. It might be a trendy drink of choice at the moment, but that’s ‘cos there’s good reason. A green juice kale smoothie contains vitamin A, which is effective in promoting cell growth and healthy skin turnover. It also packs a good vitamin C punch, which is perfect for giving you a healthy glow. ad2

5 DELICIOUSLY YUMMY NON-SANDWICH LUNCHES

Ad1 There’s no need to dread the idea of a couple of slices of flaccid bread and a lackluster filling every day because if you use your imagination, you can create some delicious non-sandwich lunches. If you invest a little time each day in making your lunch, you can reap plenty of benefits, including good nutrition, saving money and eating delicious food that really delights your taste buds. You also don’t have to fall into the trap of thinking that non-sandwich lunches are salads, rice and pasta dishes or leftovers. I’ve got some of my favorite non-sandwich lunches here and I hope they will inspire you to create your own (or just feel free to copy these).


1. LETTUCE WRAPS

Wraps are really trendy non-sandwich lunches right now. You can go traditional with a tortilla or flat bread, or you can change it up and use lettuce leaves as the wrap. Soft butter lettuce leaves are perfect, but use iceberg if you want some crunch. My favorite filling is grilled chicken breast, slices of apple, some grape halves, peanut butter, some bean sprouts, some runny honey and reduced-fat mayo.

2. CUCUMBER CUPS

Cucumbers are really juicy so they make a lunch that doesn’t dry out. To make a cucumber cup, cut a cucumber into 2 inch lengths. Scoop out the seeds but leave enough flesh as a bottom layer to act as support for the filling. The filling? Anything you like. A chicken mayo salad, a rice pilaf, quinoa or couscous salad, cottage cheese … the list is endless.


3. CELERY BOATS

Just like cucumber, celery is the perfect ingredient for non-sandwich lunches. Simply cut your celery sticks into 2 inch lengths and fill them with whatever you want. Any of the items I mentioned for the cucumber cups will work. One of my favorites is cheese and pickle. I don’t know if you have anything like Branston Pickle in the US, but all I do is grate sharp cheddar, mix it with pickle and squash it into my celery boats.

4. APPLE GRANOLA SLICES

I found this recipe years ago when I was still working in an office and it became one of my favorite snacks. Make a few of them and they provide a fairly healthy lunch. Cut some thick slices of your favorite apple and smear with peanut butter. Sprinkle your favorite granola mixed with some chocolate chips on top and devour – greedily, because they are irresistible.

5. PORTABLE CAPRESE SALAD

Do you love the combination of tomatoes, mozzarella and basil? A regular caprese salad is not the most portable of meals but this recipe can be carried to work in a Tupperware box. Grate or chop up some mozzarella. Chop up some basil. Mince some garlic. Mix the cheese, basil and garlic together with some heavy cream. (Throw it all in a food processor if you want to make a family-sized batch.) Take the top off some large cherry tomatoes and scoop out the flesh. Drizzle with balsamic vinegar and fill with the mozzarella mix. This recipe is a bit calorie laden but it doesn’t taste the same if you swap out the cream – although it might be to your taste – give light cream or Greek yogurt a try instead. ad2

Basic Makeup Routine for Everyday Life

Ad1 Every girl needs a basic makeup routine for every day. We’ve all seen downright gorgeous winged eyeliner, strobe lighting, and other on fleek makeup looks while scrolling through our Instagram feeds late at night. But when contouring becomes as complex as solving a Rubik's cube, it’s hard to find a quick, easy routine when it comes to looking good every day. So here’s a basic makeup routine for every day.

1.CLEAN AND LIGHTLY MOISTURIZE YOUR FACEThis is definitely a good first step in your basic makeup routine for every day. Before even reaching for that brush, it’s important to clean and moisturize your face. Why? Well without it, it’ll likely make your face feel really dry and uncomfortable under all that pretty makeup. Quickly clean your face with a splash of water or your handy makeup remover wipes. After, lightly moisturize with any lotion you wish to use, although make sure not to overdo it or your makeup will run.

2.PRIME UPThe importance of a good makeup primer is really underestimated. It makes sure your makeup applies smoothly and stays in place. Nowadays, you can choose your primers based on what finish you want such as dewy or mattified, and some even have properties that get rid of dark spots.

3.CONCEALERConcealer helps hide dark spots, dark circles, and even tattoos for situations when you need full coverage. It’s important to only apply concealer where you actually need it. It’s easy to run out of this, so apply in small amounts. Also, get a concealer that’s slightly lighter than your skin tone.

4.FOUNDATIONThis is probably one of the most important parts of your makeup routine. If you’re using liquid foundation, put a bit on a foundation brush or some on your hand if you happen to be using a makeup sponge. If using a powder, just apply with a brush and/or sponge and gently dust off any extra powder.

5.EYESHADOWFor better application, start off with an eye primer. Then simply apply to create your desired look.

6.MASCARAIt’s important to save this step until after finishing the foundation step or your beautiful lashes will get all dusty. To prevent staining under the bottom lashes, apply the mascara from left to right with the tip of the brush.

7.BLUSHBlush can be kinda tricky because the application technique depends on a person’s face shape and the goal of blush (softening, contouring, highlighting, etc.).

8.LIPS (LIQUID MATTE LIPSTICK)Seems very straightforward huh? Well with the explosion in popularity of such lip related phenomenon as liquid matte lipstick, it can be a bit hard not to end up overdoing it. Start off with a lip pencil and trace the outlines of your lips and color them in. Then take your liquid lipstick and color in further. Voila!

9.SETTING SPRAYTop it all off with a splash of setting spray. This helps your makeup stay in place and helps prevent the humidity from making your makeup melt off. Typically you hold it at half arm’s length away from your face and give it a couple spritzes.

Ad1 There are so many must-do experiences in Lombok. Indonesia offers a variety of landscapes through its archipelago of islands, the biggest in the world. You will definitely spend a long time exploring what this country has to offer. If you wanna go off the beaten path and try something new, I suggest Lombok as an alternative to start the adventure.

Lombok is lesser known compared to Bali and offers a wide range of activities and landscapes. Here are some of the must-do experiences in Lombok.

1. SENGGIGI BEACH

This definitely tops the list of must-do experiences in Lombok. You can start your trip by spending some time in the area. The centre is well animated with restaurants and bars. Visitors have access to a good range of hotels and resorts. The beach is not that spectacular but you can make the most of a sandy bay with private access from your resort.

Head south to discover the Pura Batu Bolong, a small hindu temple offering a scenic view of the beach. This is the spot to watch some impressive sunsets. The entrance is free if you have a sash to wrap around, otherwise it is 10,000 Rp.

2. HIKING THE MOUNT RINJANI

Hiking Mount Rinjani is a must in Lombok. The mountain is the second highest in Indonesia. Many packages are available to discover this volcano, starting from 2 day/s 1 nights to 6 days/5 nights. Most visitors opt for 3 days/2 nights. This is the package I recommend. It allows hiking to the summit and a loop around the crater.

During the climb, you will witness a spectacular sunrise from the top and the sunset from the crater. Be prepared though, the climb is very demanding as you will hike during the night and walk more than 12 hours. However, the experience is totally worth it.

Most packages include food and a guide to accompany your trek. I recommend booking in Senaru, the village from where the hike starts. Do not hesitate to inquire and compare prices before your purchase.

3. HOPPING ON THE GILIS

The Gilis refer to 3 small islands adjacent to Lombok: Gili Trawangan, Gili Meno and Gili Air. Clear water beaches and white sand are what defines these islands. Gili T is known for partying and attracts a young population. It has a buzzy nightlife and good restaurants. It is reachable from Lombok.

You can make the most of the beaches, snorkel or dive. You can rent a bike for less than 5,000 Rp and hop on different bays. At dusk, head to the western part of the island near Sunset bar to watch magical sunsets.

A night market operates from 6 pm. It offers a variety of street food. It is a good place to try grilled fish.

Gili Meno is the middle island. It is mostly a destination for couples. The atmosphere is very quiet and relaxing.

Gili Air is the last island closer to Lombok. Similarly to Gili Meno, the island attracts a different population. It is very peaceful, but has a range of cafés and restaurants to enjoy.

The landscapes are identical to Gili Trawangan in terms of beaches and scenic sunsets.

Between island hopping is possible but is limited to 2 per day. It allows day trips from Gili Trawangan.


4. SURFING IN KUTA LOMBOK

Kuta tries to create a brand like its twin in Bali - known for surfing. In Kuta Lombok, you can take surfing lessons and surf in the several beaches surrounding it. The lessons range from 350k-450k Rp. You have 3 hours of theoretical and practice in the water.

You can rent surfboards and practice independently too. Pantai Selong Belanak is a perfect spot for beginners.

The beaches are very beautiful in the area. Explore wild landscapes and inhabited lands, especially on the eastern part. I recommend particularly Tanjung An bay.

10 PROM MAKE UP TIPS

Ad1 Prom is so exciting! I remember planning my prom dress, my hair, my jewelry...the hardest thing to plan - even harder than your prom date, I think - though, is perfect prom makeup! Do you choose smoky eyes or bright lips or go with an understated look? It’s a mine field! I’ve gathered my favourite prom makeup tips to ensure you look like a star in your photos!

1. PICK YOUR EYES OR YOUR MOUTH
Clear your diary for an hour, and wash your face. That's the first step in any prom makeup routine. Then apply your eye makeup really carefully, and keep your lips understated with a clear gloss. If you aren’t sure on eye makeup colour, choose your favourite at the moment, since you can always change it later! Then take a picture. Wipe your face, and give it five minutes to dry and calm down. Then apply minimal eye makeup, and focus on your lips. Avoid brown lipstick, and try different pinks and reds. Take a picture again! Use these to decide whether you want to focus on your eyes or your lips, and to choose colours!



2. PERFECT YOUR SKIN
The next step is to make sure your skin looks flawless! Very few girls under 25 need to use all over foundation, but it’s useful to have some that matches your skin tone for emergencies! If you don’t have any, head down to your nearest department store or Sephora. The staff are always happy to help and will let you try on plenty of colours and brands until you find one you love. Then practice applying the foundation to problem areas with concealer, to give you an even and flawless skin tone. Remember to blend!



3. DARK OUTER CORNER
This is a gorgeous look, and one of my favorite prom makeup ideas, that perfectly accents your natural beauty and will look divine in your prom photos. Start by making sure skin is in good condition, and the eye area is clean.

Using a small brush, apply the lightest shade to the corner of the eye, and a thin line just below the eyebrow. Then apply the medium shade to middle of your eye, blending it into the outer corner, and the darkest tone to the very outside corner. Apply a thin layer of eye liner to the top eyelid only, and apply mascara. Gorgeous!




4. DRAMATIC EYE SHADOW
With the small brush, apply the lightest shade of shadow to the corner and middle of the eye, up to just below the eyebrow. Apply the medium hue to the eye lid, crease and below the lightest colour, just under the eyebrow.

Apply the darkest hue to the outer corner, over the medium, as this helps it to stick better. Then apply a thin layer of eye liner from the middle of your eye to the corner, and apply either mascara or false eyelashes to finish the look! Keep all other make up minimal, and stick to simplistic jewelry with your dress.



5. NATURAL LOOK
It’s important that the eye shadows match your skin colour closely for this natural prom makeup look! Pick the medium hue, and apply to the whole eyelid. Apply the darkest eyeshadow to the corners, blending towards the middle and into the crease, and apply the lightest to the very middle of the eyelid, giving it a polished, 3D finish. Then apply a layer of mascara, and some lip colour. Gorgeous!



6. CAT EYES
This is a hard look to master, but it’s so worth it! Use the pale grey liner to outline the cat eye shape and perfect them. Make sure they match! Wet the grey eye shadow and apply it into the shape, making sure you stay within the lines. Then sharpen the edges with eye liner, and apply black eyeliner to the bottom lashes. Add mascara, and you’re good to go! Just remember to keep your other makeup understated or you’ll look too overdone!



7. ROSY FRESH CHEEKS
You need flawless skin for this, so apply foundation to blemishes and any uneven skin patches. If you have any marks that foundation won’t cover, use concealer. Then apply creamy blush in to the roses of your cheeks, blending outwards. Finish this prom makeup look by applying mascara to your lashes, above and below, and complete your look with the lip gloss in a pretty pink shade!



8. GLITTERY GLAM
If you want a bit of sparkle in your look, it’s important to incorporate it carefully to stop you looking young and overdone! Begin by blending brown eye shadow across your eyelid, and using glittery eyeliner to draw a thick line above your lashes.

Make sure it’s dry before you open your eyes! Apply two coats of mascara and make sure your eyebrows are looking tidy, and then apply creamy blush to your cheeks. Complete the look with a slightly sparkly lip gloss, and a big smile! This is one of the best prom makeup tips because the glitter will really stand out under the lights on the dance floor.



9. SIMPLE MATTE MAKEUP
Let your dress do the talking in this beautiful but low-maintenance look! Begin by lining your eyes with a thin layer of brown eyeliner, and applying a small amount of cream eyeshadow to the middle of your eyelids. Apply mascara, adding extra to the corners of your eyes to make your eyes pop, and finish by applying powder blush and matte lipstick. This is my favourite prom look! It really does show off your natural beauty and looks great in photographs!



10. RED LIPS
Some people love red lipstick so if you’ve set your heart on wearing it to prom, here’s my guide to getting it right. Keep your eyes very simple, using just mascara and if really necessary, false eyelashes. They need to look defined, but natural. Then apply foundation to any areas of your skin that aren’t even, and apply blush to your cheeks. Use the different red lipsticks, usually the darkest colour is in the corners of the lips, with a lighter shade in the middle.

Make sure that the colours suit you, and if you aren’t sure, test some at a department store and buy the best two. Don’t use gloss, as this will cheapen the look, and instead just blot on a tissue and you are ready to go!

Now your make up is sorted, it’s time to pick matching jewelry, paint your nails and make sure you drink enough water and get enough sleep! That will make sure you look your best on the day, and are eye catching for all the right reasons! Have you got a prom look you love? Please share it with me!

Like making fire, shaking a signature cocktail and changing a tyre, cooking the perfect steak is a life skill every man needs in his day-to-day arsenal. Trouble is, every alpha male alive also thinks his steak is the best.
To really back up that claim, you need the ability to wax lyrical about different types of steak, why feed affects flavour and how the ageing process works. And yes, you have to serve up a piece of meat that is better than sex. Below, some of the UK’s best butchers and steak chefs explain it all, giving you a reusable clip of dinner party ammo that will serve you well for life.

Choosing Your Cut

The Shop

Selecting what’s going on your plate begins at your butcher’s door. “Take a moment to think about your shop. It should smell slightly sweet, the displays should be clean, as should the staff. A butcher who takes pride in his appearance will inevitably apply these principles to his work,” says Richard Turner, group head chef for Hawksmoor, one of the UK’s best steakhouses.

The Chat

It’s all about showing a bit of interest. Butchers are convivial chaps – they’re only too happy to talk about the types of steak on offer. “Ask what breed the animal is, where was it farmed, what it ate, how old it was at slaughter, how long it has been hung and – most importantly – if he has tasted it and if can he recommend it,” says Turner. “Enter a dialogue and treat it like a first date. It’s a life-long relationship you are after.”

The Selection

Steak, unlike chicken and pork, is a type of meat that you can tell a lot from, just by looking. There are plenty of visual cues to assess: “You want a deep red colour, which shows that it has been dry-aged,” says Grant Martin of boutique London butcher Parson’s Nose.
“There should be a slightly darker edge on the outside of the fat. This shows that it’s been aged properly and that the blood has passed through the meat with oxygen, causing the lactic acid build up that adds flavour to the meat. Steak that is sold too fresh after the kill is bright pink, tastes of very little and is tough to eat.”
While you’ll never get as good quality or the same level of advice in a supermarket, you can apply the same principles. Don’t feel bad about touching it through the plastic. If you poke it and it leaves a finger mark, as well as feeling wet and soft, it’s not been aged properly.

The Feed

Grass-fed happy cows will taste better than those who’ve been on a grain diet. It also means they will have been reared most of their lives outdoors, enjoying sunlight. “A yellowy tinge to the fat is a good thing,” says Jonny Farrell, head butcher on Jimmy’s Farm. “It comes from the carotene the cow has digested from eating grass. The best steak I’ve had, from 18-year-old ex-dairy cows, had a stunning deep amber quality to it.”

The Marble

Marbling – the tie dye-style white pattern within the meat – is key to flavour. “You want a nice even spread of marbling throughout steak,” says Martin. “Any marbling patterns towards the outside of the cut suggests that it has been fattened quickly prior to slaughter. If the meat is too dark in colour, a deep black or red, it could be a sign that the animal was stressed before the kill and then the meat will eat tough.”

The Basics Of Cooking A Steak

The most important thing when it comes to cooking a steak – or any other meat, for that matter – is to make sure it’s at room temperature before it hits the heat, a process called ‘tempering’. Leaving it out for 30 minutes pre-cooking is about right for the perfect cut, which is 350g and 4cm thick.
“It’s a common mistake to season before cooking, as this draws out moisture,” says Michael Reid, head chef of M Restaurants. “You need a pan so hot that it’s smoking and you can’t hold your hand near it. Place it into the pan and leave it – if it’s hot enough it won’t stick. Season the face-up side heavily with Maldon sea salt and fresh black pepper.
“Once you’re starting to get a nice colour, add a couple of cubes of butter to the pan and lower the temperature. Tilt the pan away from you and scoop up the melted butter with a spoon. Baste the steak with this liquid as much as you can – you’re pumping in flavour,” says Reid. “Flip it after three minutes for medium rare and repeat the process on the other side. Drop in a sprig of thyme to add flavour to the butter.”
Then to rest. Resting is vital to cooking all types of steak as it gives the cut time to redistribute moisture and give the juicy, butter-like texture you’re after. “A simple rule is to rest it for as long as you cooked it,” says Reid. “Wrap it loosely in some foil on a chopping board so it doesn’t lose too much heat.”

Types Of Steak

Quick Jump: Rump | Ribeye | Sirloin | Fillet | T-bone or Porterhouse | Bavette or Goose Skirt | Onglet or Hanger Steak | Flat Iron | Chateaubriand

Rump

Aka: Culotte (literally, ‘trousers’) in France and (confusingly) sirloin in the US.
Found: On the animal’s backside.
What To Look For: You won’t see much marbling as it’s a lean cut – the rump does more work than other parts of the animal – but make sure yours has been cut against the grain. It needs plenty of hanging time to develop flavour, at least 22 days. The ideal size is about two inches thick.
Taste: The best-value, everyday type of steak. It’s packed with flavour, but as it’s a working cut, it requires extra care when cooking and isn’t one to take rare.
How To Cook It: It needs a minimum of three minutes on each side with plenty of basting. As it’s a muscular cut, you need to break down the fibres with heat and fat to make sure it’s tender. Resting is vital here, too.

Ribeye

Aka: Spencer in the States and generally served bone-in.
Found: On the fore rib of the cow. The ribeye section spans from ribs six through to 12.
What To Look For: A good example should be well marbled with a central layer of fat running through. A big old hunk of fat on the corner suggests skilled butchery and will aid cooking.
Taste: Its fat content brings the flavour. “It’s our most popular cut,” says Hawksmoor’s Turner. “It’s great on the barbecue as it benefits from a nice hit of smoke.”
How To Cook It: As it’s a little-worked cut, you can eat it as rare as you dare. Get the pan as hot as you think it can go, then give it another 30 seconds before frying. If it’s not spitting and screaming when you cook it, it’s not hot enough.

Sirloin

Found: From the middle-back section of the beast, covering the spine.
What To Look For: The sirloin responds brilliantly to ageing. Some butchers give up to 60 days to allow it to develop an extra beefy flavour. These types of steak will be dark red, but don’t accept anything with a green, almost slimy deposit as it means it has started to spoil.
Taste: According to legend, King James I was so impressed with this cut he anointed it ‘Sir Loin’ in 1617 and it’s stuck ever since. A great balance of fat to muscle means the melt-in-the-mouth texture is easier to achieve. “Even if you don’t like to eat the fat, make sure you cook it with it on,” says Martin of Parson’s Nose. “Allow it to do its work, then cut it off after cooking, if you really have to.”
How To Cook It: You need to properly render the fat, which means a super-hot pan. Keep cooking until the fat has taken on a golden brown colour the entire width of the steak. Take it rare, medium, or well done, just make sure it’s rested for the duration that it had in the pan.

Fillet

Aka: Filet Mignon in the States and Filet du Boeuf in France.
Found: Inside the sirloin, running along the side of the animal’s spine.
What To Look For: You won’t find any marbling here – this muscle does no work at all. You’re after a deep cut of a similar width, so it cooks at an even rate.
Taste: It’s the leanest, most expensive cut and popular among gym-goers. However, its lack of fat means less flavour and it doesn’t benefit from hanging or ageing, as there’s no fat to break down. It works well with fatty sauces, like Diane or peppercorn.
How To Cook It: Cook it rare or medium rate and go for a medium heat with plenty of basting. As it’s so lean it can easily become tough as the fibres tighten, so be careful not to overcook.

T-Bone Or Porterhouse

Found: The lower middle of the animal. It’s part sirloin and part fillet with the two cuts divided by the ‘T’ of bone.
What To Look For: This cut takes skilled butchery, so make sure everything looks even and cleanly cut. Straight lines and good-sized portions of both steaks make a good steak.
Taste: The best of both worlds. You’ve got the leanness of the fillet contrasted with the fat of the sirloin. Ready you largest pan.
How To Cook It: The two different cuts require different cooking times, so it can be tricky. Your best bet is to have the butcher leave the bone in. Sear the whole thing in a hot pan, then transfer to a 200°C oven for 10 minutes to make sure everything is properly cooked and tender.

Bavette Or Goose Skirt

Aka: Flank in the States and France.
Found: The end of the inner flank, just above the liver and kidney, sitting over the belly.
What To Look For: An even, flat sheet of meat, with an almost rope-like texture and good, even marbling. You can expect superb value for these, as the UK is only just starting to adopt it.
Taste: Arguably the best-tasting cut when properly prepared. Fat and muscle tissue in perfect harmony to create a full flavoured, meaty steak that’s brilliant on the barbecue.
How To Cook It: These benefit from tenderising by marinating overnight. Try olive oil, soy sauce, lime juice, salt and coriander and leave it in a freezer bag in the fridge. Bring up room temperature and cook on a searing heat for four minutes on both sides.

Onglet Or Hanger Steak

Found: Next to the diaphragm, running through the centre of the animal.
What To Look For: A similar ropey texture to bavette and don’t be put off by its uneven nature. You want a thin, flat near-circle of meat.
Taste: Huge depth of flavour and a slight offally tang as it’s so close to the animal’s organs. A true meat lover’s cut and popular among anyone who holidayed to France in the nineties. Serve with French fries and a stubby glass of vin rouge for the full effect.
How To Cook It: This works well butterflied to create a thin sheet of meat that can be served super rare. Try two minutes on either side and plenty of seasoning.

Flat Iron, Oyster Blade Or Butler’s Steak

Found: On the shoulder blade.
What To Look For: This should be cut with the grain with a bit of fascia membrane attached – don’t let this put you off when buying, but cut it off prior to cooking.
Taste: It will be a little tough and a little chewy, but the flavour (and its inexpensive price tag) makes up for it.
How To Cook It: Never serve it beyond medium. Because of its density, it will take slightly longer to cook – say, eight minutes. Start it in a hot pan and reduce the heat, to make sure it’s cooked all the way through.

Chateaubriand

Found: On the tail of the fillet – the most expensive cut in the butcher’s window.
What To Look For: A thick-cut cannon of steak that has even size across its length.
Taste: This is the perfect sharing steak. It’s as tender as a fillet with the flavour of a sirloin – not with huge meaty flavours and texture like butter when cooked properly.
How To Cook It: It’s extra lean, so benefits from the addition of copious butter. Heat a hot pan and sear it on all edges. As it’s cylinder shaped, use tongs to make sure each edge gets golden-brown colour. Finish it for 14 minutes in an 180C oven and slice into two-inch rounds before serving.
